Eco Practices

Our efforts towards being socially responsible are to create as small of a footprint on the trail as possible, while conducting a profitable business and supporting other agencies in our mutually shared objectives.

All of our paper products, straws and trash bags are recyclable or compostable. 100% of our electricity is offset with wind power and we use CFL light bulbs wherever we can. We recycle all of our waste oil with a variety of local companies including Rocky Mountain Sustainable Enterprises.

All of our restaurants use natural beef, chicken and pork and source cleaner ingredients, natural and local whenever possible. We have strong relationships with Isabelle Farms, Munson, Abbondanza, Colorado’s Best Beef, Haystack Mountain Goat Cheese, Bear Mountain Ranch, Red Bird Chicken, Breadworks Bakery, Hazel Dell Mushrooms, Ela Family Farms, Ice Cream Alchemy, Tonali’s Meats and Glacier Ice Cream. We grow and use herbs from our garden boxes. All of our restaurants support fisheries and purveyors that are environmentally conscious and that fish legally from sustainable waters.

Jax Fish House Boulder and Denver, The West End Tavern and Zolo Southwestern Grill recycle and compost nearly 100% of their discards. Jax Fish House Boulder, The West End Tavern and Centro Latin Kitchen & Refreshment Palace are PACE certified. Happy and Zolo Southwestern Grill are currently working to receive PACE certification. The West End Tavern uses Rainforest Certified Coffee.
